This southern white is an absolute delight. Its invigorating nose offers a fine range of aromas, with citrus fruits, floral notes, fresh spices, and a hint of white fruit. The palate is well-balanced, vibrantly acidic, and particularly long-lasting. Pair with sautéed green asparagus, burrata, Modena balsamic, and pistachios. Winemaker’s Note: Located 20 km from Montpellier and close to Saint-Guilhem-le-Désert, the village of Argelliers is halfway between Le Pic Saint Loup and Larzac. Pierre took over the vines step by step from his uncle, who was traditionally a cooperative member. In 2017, with Samuel, they decided to create the Clos Constantin winery. Fifteen hectares are divided into small plots in two localities, Font-Belette and Les Champs de Traversiers. The domain is in organic agriculture and biodynamic conversion. In the cellar the vinifications are meticulous; Whites in direct pressing or maceration; The reds are vatted in whole clusters or destemmed. Fermentations are carried out with native yeasts from the cellar and the grapes. Once completed, the aging on the lees will last between 6 and 24 months in vats (stainless steel, concrete, wood) depending on the vintages and the balance.
